25 pounds down!!!

So excited, just got on the scale down 25lbs.  1/4 way to losing 100lbs.  2.8 lbs to get to 10 percent weight loss.  In 6 weeks, yippee.

So what to share today?  I did get a nice new pedometer.  You can carry it in your pocket or clip it on.  You only have to enter height and weight for it to calculate your stride.  So no confusing how many steps you did to walk so many feet to program it.  It remembers daily info for a week.  You can also direct it to log an "action" period when you exercise.  So when i do my laps at work i set it to measure my walk and hit it again when i am done, so it gives me steps, miles and calories burned for the "action" period.  Her is the link for the best price i found which is on amazon for $12.50(for the black only, other colors more) omron pedometer

How cool is my weight loss ticker.  Super easy and you can put the ticker on a blog or facebook.  You can make tickers for all kinds of stuff--count down to baby, wedding, vacation, track weight loss, scrapbook pages made, progress on exercise goals.  Super easy.  If you use it make sure to remember your password, there is no way to retrieve the password if you forget.  tickerfactory

Mexican-Style Chicken And Smoky Chipotle Quinoa Casserole

INGREDIENTS:

3 tablespoons extra-virgin olive oil, divided use
1/2 cup diced red onion
1 clove garlic, minced
1 tablespoon flour
1/2 cup smoky chipotle salsa
1 can (14 1/2 ounce size) diced tomatoes with green chilies, divided use
1/2 cup dry quinoa, MIXED WITH
1 cup chicken broth (prepared according to quinoa package)
1/2 teaspoon cumin
1 tablespoon lime juice
1/2 cooked chicken (diced or shredded)
1/2 cup shredded cheddar cheese
salt

***Garnishes***
shredded cheese
diced red onion
avocado
sour cream

PREPARATION:

Preheat oven to 350 degrees F. Heat 1 tablespoon olive oil in pan over medium heat. Add onion and garlic. Saute until slightly tender. Remove from pan.

Add remaining olive oil to pan. Add flour. Whisk until smooth. Add salsa and liquid from diced tomatoes. Heat, whisking, until slightly thickened.

Add onion and garlic mixture, tomatoes, quinoa, cumin, lime juice, chicken and cheese. Add salt to taste. Transfer to 2-quart casserole.

Bake, covered, for 15 minutes. Remove cover. Bake for 15 minutes or until bubbly. Remove from oven. Let stand for 10 minutes. Top with any combination of garnishes.

I don't use any of the garnishes, and use much less olive oil.
