30 lbs Down!!!

Sorry, I didn't post last week.  Hard to decide what to say.  So last week i was down 27.8 lbs(so 10%).  Last night got on the scale and down 30lbs. 
So I finally found the new flavors of Crystal Light Energy at the store.  Grape is good, Citrus is awesome.  They have caffeine.  I like the flavor of these better than the Mio Energy, which has a bit of a medicine taste.  The only store i have found them at so far is Target.  http://www.kraftbrands.com/crystallight/pages/default.aspx#/energy

A friend at work has recommended Chia seeds.  Yes,  ch-ch-ch-chia, but not the kind you grow on a terra cotta head.  Aparently these seeds have many health benefits.  So I have bought the bag, but have yet to try them.  Anyone out there used these?  I'll let you know how they are.

Again thanks for all the support, it is appreciated and keeping me on track.  Haven't had one Girl Scout cookie yet, even though i have spent many hours in their company the last week.  First unloading the Manchester Truck, since getting orders to girl families, passing out Melissa's orders and a cookie booth over this past weekend.  Keith has been instructed to place two samoas in a bag for me when he opens the box.  I think i am better off not handling the open box myself. 

Any Hikers out there.  Want to get my family into a little hiking this summer.  We need to do healthy activities as a family.  I am also hoping to get a group of Girl Scouts together, this summer, to hike a portion of the Appalachian Trail.  One of the initiatives for the 100th Anniversary of Girl Scouting is the Great Girl Scout Hike, the goal being to have all parts of the Trail Hiked by Girl Scouts(current and alumnea) between March 12th and October 31st of this year.  I did speak with someone from the Appalachian Mountain Club at an event over the weekend, i got his card and he is going to get me some advice from their membership.  But i am open to suggestions.  Especially from those who have hiked with kids.  Mine are 4 and 7, so what are some good starting hikes, what gear do in need to get for them, any sources for used gear for kids?  Please share if you have any thoughts.

25 pounds down!!!

So excited, just got on the scale down 25lbs.  1/4 way to losing 100lbs.  2.8 lbs to get to 10 percent weight loss.  In 6 weeks, yippee.

So what to share today?  I did get a nice new pedometer.  You can carry it in your pocket or clip it on.  You only have to enter height and weight for it to calculate your stride.  So no confusing how many steps you did to walk so many feet to program it.  It remembers daily info for a week.  You can also direct it to log an "action" period when you exercise.  So when i do my laps at work i set it to measure my walk and hit it again when i am done, so it gives me steps, miles and calories burned for the "action" period.  Her is the link for the best price i found which is on amazon for $12.50(for the black only, other colors more) omron pedometer

How cool is my weight loss ticker.  Super easy and you can put the ticker on a blog or facebook.  You can make tickers for all kinds of stuff--count down to baby, wedding, vacation, track weight loss, scrapbook pages made, progress on exercise goals.  Super easy.  If you use it make sure to remember your password, there is no way to retrieve the password if you forget.  tickerfactory

How about a recipe?

Mexican-Style Chicken And Smoky Chipotle Quinoa Casserole

INGREDIENTS:

3 tablespoons extra-virgin olive oil, divided use
1/2 cup diced red onion
1 clove garlic, minced
1 tablespoon flour
1/2 cup smoky chipotle salsa
1 can (14 1/2 ounce size) diced tomatoes with green chilies, divided use
1/2 cup dry quinoa, MIXED WITH
1 cup chicken broth (prepared according to quinoa package)
1/2 teaspoon cumin
1 tablespoon lime juice
1/2 cooked chicken (diced or shredded)
1/2 cup shredded cheddar cheese
salt

***Garnishes***
shredded cheese
diced red onion
avocado
sour cream

PREPARATION:

Preheat oven to 350 degrees F. Heat 1 tablespoon olive oil in pan over medium heat. Add onion and garlic. Saute until slightly tender. Remove from pan.

Add remaining olive oil to pan. Add flour. Whisk until smooth. Add salsa and liquid from diced tomatoes. Heat, whisking, until slightly thickened.

Add onion and garlic mixture, tomatoes, quinoa, cumin, lime juice, chicken and cheese. Add salt to taste. Transfer to 2-quart casserole.

Bake, covered, for 15 minutes. Remove cover. Bake for 15 minutes or until bubbly. Remove from oven. Let stand for 10 minutes. Top with any combination of garnishes.

I don't use any of the garnishes, and use much less olive oil.

Foods i am loving!

So here i am back on the wagon.  Started the first week in January.  Down 20.2 lbs so far.  I am getting overwhelming support from my family, friends and co-workers.  My sister and I are exchanging healthy meals.  My co-workers are offering frequent words of encouragement, expecially as i do my nightly hour of laps around the ICU. 
I thought for my first installment of my blog i would share some of my favorite foods of the moment.

Cabot 75% Reduced Fat Sharp Cheddar Cheese---yummy with fruit or crackers, great grated in recipes.
1 ounce=60 calories, 2.5g fat, 9g protein

Also eating lots of chili, soup, fresh berries, oranges, peaches, salad, yogurt, almonds.  Trying out new recipes with whole grains such as quinoa, bulgur.  I'll post some recipes soon.  And of course lots and lots of water.

Doing the treadmill, free weights, walking laps at work, and just got Biggest Loser for the xbox kinect.  Thanks to all for your encouragment, it is much appreciated.
